@dave - as far as pulling video off tapes (assuming DV tapes) then I use firewire. If it's an analog format (VHS, hi8, etc) then I use a breakout box by a company called Canopus that takes in an analog signal and converts it to a digital stream that is captured via firewire

I'm downloading Final Cut Pro 7 now. :)

Dave, if you are running XP or Vista then Windows Movie Maker is the native app that will import MiniDV's to AVI.

if it's miniDV or VHS I can do it, if it's Hi8 or 8mm then I can't.

You'll need FW to import the video. I think that old Mac sitting in your dining room has FW on it. I also might have a PCMCIA FW card.

does it have RCA output (yellow/red/white)? If so I have a breakout box to convert that signal to be picked up by FW (it's how I capture VHS and burn to DVD)

I'd suggest that thing that I have if you want to capture it the right way as DV footage. Through USB you can only ever get that weird 352x240 bullshit and not 720x480. I can do it for you, it's not that hard.
